Packers Birthday Cake | New Favorite Recipe

December 6, 2015

Hey y’all! I’m back! This semester has been super busy, but I’m almost done with all of my classes! For today’s post I’m going to be sharing a recipe that I found for a lovely white cake. It’s honestly my new favorite birthday cake recipe.

I’ve never made a cake completely from scratch and when my sister asked if I could make one for my brother, I wanted to find a really good recipe that hopefully everyone would enjoy.

I used this lovely recipe from Add A Pinch and it’s honestly one of the best tasting cakes I’ve ever tasted. The only things I changed were that I used lard instead of vegetable shortening and I also didn’t have any buttermilk on hand, so I used vinegar and milk.

For each cup of buttermilk, you can use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir, then let stand for 5 minutes.

My sister had this five piece pan set that is used to make rainbow cakes from Michael’s, but we used it to make the cake into my brother’s favorite football team’s colors. He’s a HUGE Packers fan, so I alternated green and yellow to make him a Packer cake.

Before putting the batter in the pans, I divided the batter up into two separate bowls and used yellow gel food coloring in one bowl and put green in the other. There’s not really a set amount of food coloring to use, so I recommend just adding a bit and stirring it in, then just keep adding the food coloring until you are happy with the color. I think I used about half of each tube to get the color I wanted.

The recipe actually made a lot more batter than I needed, but you could always make the rest into cupcakes or even another cake. I think we used about a cup of batter for each pan.

For the frosting, I used another recipe from Add A Pinch. I honestly love their recipes as they are so easy to follow and seem to always come out good, especially for someone who had never made a cake from scratch. I personally love the whipped icing from store bought cakes, but I have found a new love for buttercream frosting. This one tasted amazing and had such a sweet vanilla flavor.

I didn’t change anything in this recipe as I actually had some heavy whipping cream on hand. The amount of frosting this recipe made was also perfect for my little five layer cake. I only had a little left over, which I may or may not have snagged a bit from the bowl (it was just sooooo good *wink face*). I probably wouldn’t recommend licking the entire bowl/spoon as it is a tad sweet, but to each their own.

So, I guess that’s all I have for y’all today. I hope you enjoyed this. I have found icing cakes is extremely difficult, so my cake didn’t have the best presentation, but I think I did pretty well for my first time. 🙂

Let me know in the comments what your favorite recipes are. I’m always looking to add things to my recipe book/new baked goods to make for parties.

All the love, B.
